Does anybody know the name of the classical piece of music that plays with
the Grand Theft Auto 3 software advert ?

I think it may be by Pavarotti ?

I've not seen the advert but I've played the game, and on the Classical
radio station, somebody sings 'The Drinking Song' from the Opera 'La
Traviata'. I suspect that's likely to be the one you're on about
because Pavarotti has recorded it with Leslie Garrett (which you can catch
on ClassicFM from time to time - the entire playlist being available on
their site).
